It's stupidly impractical since it would be cheaper to hire a chef to use a regular one than it would be to make/buy a knife like that (I'd imagine in the 10+ figure range simply because research, custom equipment, etc required). On top of that, repairing chips would be next to impossible. Still cool though.
They make ceramic knives for average consumer use. Wikipedia says they usually use Zirconium Dioxide.
