The pasta's so easy but so impressive it's almost cheating. Cook yoru pasta al dente, drain it, put it back in the pan with diced goats cheese, stir it until the cheese has melted and coated the pasta, throw in your slivers of mushroom, stir them through for 2 minutes, plate it up, sprinkle finely-chopped salad leaves lightly over them, add enough black pepper to give it some visual texture and ... yeah, that's actually it. You can even skip the salad leaves and black pepper and still have people going "oooh!" over 10 minutes' simple work.

Then you might find cooking enjoyable. You could try taking classes. I never took any, but they probably wouldn't hurt and I hear they are a great way to find a date (group assignments and you already share an interest).
The way I learned is out of necessity. I lived alone for a long while with a meager income, which meant that if I wanted to eat, I needed to cook for myself. Eventually I gained an understanding of basic cooking techniques, complementary flavor profiles and how to balance out textures. Once you have that down, there's no end to the creative things you can do.

Sure, but those aren't the only two possibilities. You don't have to know how to cook in order to microwave a ready meal or make a sandwich.
