If you play any Steam game, you'll get all of Steam's benefits (including VAC), because they force you to use Steam to play the game. The reason that Xbox Live has them all in one place is because Microsoft owns a monopoly on online Xbox play, and as such gives you no choice in what services to use...

I believe the trail version of Fraps is 30 second videos, and includes a watermark. I believe Xfire has some video recording capabilities that have recently been added. It includes a watermark, but the time it's unlimited.
